According to legend, a goat herder in Ethiopia discovered coffee in 800 A.D. From Ethiopia, coffee spread to Egypt, Yemen, Persia, and Northern Africa, eventually the beverage reached Italy where the first European "Coffee House" opened in 1645. Today around 2 Billion cups of coffee are drunk each day around the world. Coffee is now the 2nd most valuable trading commodity after Oil.
Coffee’s flavor depends on the region where it grows, the way coffee makers roast and blend the beans. When growing beans, seed to first harvest takes about 2 years. Coffee plants flower over the course of 3 days filling the fields with fragrant Jasmine like blooms. Over 6 months the buds grown and ripen into red cherries that contain the coffee bean. Pickers harvest the red cherries leaving the green ones to ripen. After washing the cherries the outer skin is removed revealing the bean. Once the beans are dried they go into a milling machine. Drying methods vary amongst coffee makers.
Coffee has over 800 characteristics, almost double those of wine. The master roaster roast the coffee beans . As they roast the bean goes from green to golden brown, then black. The master taster intensely test the coffee to make sure the roast is perfect.
Gourmet coffee must go piping hot from the grinder to the bag to insure freshness. Nitrogen is pumped into the bag to replace oxygen and keep the coffee fresh.
The coffee bean is then transported to your local Coffee House or grocery store to bring you the satisfaction of drinking perfect cup of coffee.
